Southern Jalapeño Cheddar Biscuits

Ingredients

  • 1 1/3 Cup All-purpose Flour
  • 1/4 cup Fine Milled Cornmeal Polenta
  • 3 tbsp. Granulated White Sugar
  • 2 tsp. Baking Powder
  • 1/2 tsp. Kosher Salt
  • 1/8 tsp. Ground Cayenne Pepper
  • 1 1/4 cup Shredded Cheddar Cheese
  • 2 tbsp. Jalapeño Pepper, Diced Small
  • 3/4 cup Heavy Cream
  • 1/4 cup Shredded Cheddar Cheese
  • 2 tbsp. Heavy Cream

Directions

  1. Preheat oven to 425°F.
  2. In a large bowl, whisk together the flour, polenta, sugar, baking powder, salt and cayenne.
  3. Stir in 1 1/4 cups of the grated cheddar cheese and the diced jalapeños.
  4. Make a well in the center of the flour mixture.
  5. Pour the cream into the center of the well and use hands to gently bring together the ingredients so that the dough will be sticky and clumpy.
  6. Turn the dough out onto a surface lightly dusted with flour.
  7. Knead the dough just a few times - maybe only three or four pushes – do not over knead dough.
  8. Using a biscuit cutter, form the dough into a disc about 3/4-inch to an inch thick.
  9. Place biscuits onto a parchment lined baking sheet, with at least an inch or two between the biscuits. Brush the tops of the biscuits with cream and sprinkle with cheese.
  10. Bake for 11-12 minutes or until golden and the cheese is nicely melted.
